I always bring my own lunch to work. It’s cheaper , better for your health and more delicious. I usually always take the same thing; deliciously ella’s cucumber-hazelnut quinoa or a salad. But a little while ago I felt like trying something different. Something new. I came up with this recipe on a whim but it tastes so good I’ve made it several times, since. It’s fresh, filling, creamy and full of healthy ingredients. This recipe is perfect as a to-go-lunch (make this batch the day before and you can bring it as a lunch for the next two days). Lately, I’ve been on a health streak. I’ve never been able to keep that going for this long. The reason I manage to keep eating healthy is because I make every meal delicious. I’ve been experimenting with new recipes and “tickle my taste-buds” (anyone get the reference?) in order to keep this healthy lifestyle exciting.
One of the ingredients I am loving, at the moment, is Seamore I sea pasta. This pasta (made of just seaweed) is delicious, light and flavorful. You can use it in Asian or Mediterranean dishes, it always works. Fun fact: Seamore pasta is a great source of Iodine – something that isn’t easy to get in on a vegan diet.

The recipe below is one of my childhood favorites. Tortilla de patatas, or “Spanish omelet”, is a dish that’s perfect in all it’s simplicity.
Every once in a while my mom would make a big tortilla de patatas and I would just love it. It took me a while to realize I could veganize the recipe and I am so glad I did. Together with the aioli you have yourself a crowd-pleaser.
The aioli is a great condiment with other foods, too. It’s super easy and great for your next barbecue, fries- or nacho-night.

This is a recipe that I’ve always loved. When I was young, my mom used to make these meatballs and she served them with white rice and cucumber salad. It was one of my favorite dishes.
This was also a dish that I didn’t think I would be able to eat as a vegan. And it has taken me a while to figure out how to make it. But I’ve done it! And it’s amazing.
