Anyone who knows me, knows I love London. It’s a love that’s existed from the very first time I went there with my parents. Since then I’ve visited London at least once a year, every year and I still love it when I get there. There’s always new things to discover, places that inspire me or people to meet. It is my dream to one day move somewhere just outside of London and be able to enjoy the city whenever I can. With the return of cold weather it’s nice to make more warming dinners. One dish that my mom used to make when I was younger was this broccoli mousse. It’s warming, creamy, filling and delicious. The recipe below is one of my childhood favorites. Tortilla de patatas, or “Spanish omelet”, is a dish that’s perfect in all it’s simplicity.
Every once in a while my mom would make a big tortilla de patatas and I would just love it. It took me a while to realize I could veganize the recipe and I am so glad I did. Together with the aioli you have yourself a crowd-pleaser.
The aioli is a great condiment with other foods, too. It’s super easy and great for your next barbecue, fries- or nacho-night.

Just two days ago I came back from Disneyland Paris. I LOVED it.
After coming back I figured I should put up another “vegan favorites” blog for my vegan travel series. It’s hard to really call these foods “favorites” as Disneyland Paris is notoriously ill-suited for vegans (but for the sake of maintaining some coherence in this vegan-travel-series the title remains).
It is perfectly possibly to visit Disneyland Paris as, or with, a vegan. You just have to know where to go and what to get.

A little while ago I was craving granola.
But I wanted a gluten free and relatively healthy one as it just makes me feel way better.
With a couple of ingredients I had lying in the pantry I made this granola and it’s been my go-to ever since. It’s crunchy, nutty and a little sweet.

A little while ago, I let go of some people that had played a big role in my life. It wasn’t that they did something to hurt me. It was just that, over time, I started to realize they were adding more negativity than joy to my life. While this was definitely the right thing to do, letting go of people who you have been around for a long time is taxing. Over time you learn to identify yourself by the people you hang out with. You start wondering whether you were a bitch for no longer investing time and effort into someone who didn’t purposely hurt you and who’s been with you for so long.
