Lately, I’ve been on a health streak. I’ve never been able to keep that going for this long. The reason I manage to keep eating healthy is because I make every meal delicious. I’ve been experimenting with new recipes and “tickle my taste-buds” (anyone get the reference?) in order to keep this healthy lifestyle exciting.
One of the ingredients I am loving, at the moment, is Seamore I sea pasta. This pasta (made of just seaweed) is delicious, light and flavorful. You can use it in Asian or Mediterranean dishes, it always works. Fun fact: Seamore pasta is a great source of Iodine – something that isn’t easy to get in on a vegan diet.

While you can simply make a noodle soup/bowl or pasta marinara, I thought I’d give you all some inspiration for a totally different dish. The recipe below is deliciously flavorful and packed with veggies. Allergen-wise: it’s vegan, nut free and gluten free. It’s also quick and easy, so great for weak-day dinners.
– 25 g seamore pasta*
– 75 g tempeh
– tbsp tamari
– 3/4 cup shredded carrot
– 1 cup mini florets cauliflower
– 1 clove garlic
– 1 tbsp sliced red onion
– tsp cumin
– tsp ground coriander
– 1/2 tsp paprika
– fresh cilantro
*If Seamore isn’t available where you live, you can substitute the sea pasta with rice noodles or other seaweed pasta.
Cook the pasta for 20 minutes, until al dente.
Cut the tempeh into small cubes and let them marinate in tamari.
Heat a non-stick pan on medium-high heat. Bake the onion and garlic for several minutes, until fragrant. Once fragrant add the tamari tempeh and bake for 3-5 minutes.
Add in the cauliflower, cumin, ground coriander, paprika, salt and pepper and a splash of water. Let this all cook until the water has evaporated (about 5-10 minutes). Then add in the shredded carrot and bake for another 5-10 minutes.
When the pasta is done, drain it and add it to the vegetable mixture. Mix well.
Serve with chopped cilantro and lime juice.
That’s it! So quick and easy.
