Healthy Vegan Chocolate Chip Cookies

A little while ago I was really in the mood for cookies. But the problem: the ones in the supermarket are almost completely non-vegan. And most recipes online require tons of sugar, vegan butter or oil. So I decided to make some “healthier” vegan chocolate chip cookies. These are fluffy, light and almost like little cakes. They kind of remind me of the Lenny & Larry cookies.

They obviously don’t taste like the super unhealthy chocolate chip cookies from the store, but if you’re feeling like them and don’t want to be super unhealthy these are a great way to get your choc-chip-fix.

Healthy vegan chocolate chip cookies
Ingredients:
– 1 big banana
– dates
– 100 g soymilk
– 100 g peanutbutter
– 200 g gluten free flower (I used Schär)
– baking powder
– vanilla extract
– 80 g chocolate cut up

Directions:
Preheat the oven to 180 degrees Celcius (350 F).
In a bowl, mash 1 big banana until no pieces are left.
Put the banana in a blender and add dates until you reach 180 grams. Blend together with a little of the soymilk.
Add the rest of the soymilk, the peanutbutter, the gluten free flower, baking powder and vanilla extract.
Cut the chocolate into small pieces and mix through the mixture with a spoon or fork.
Divide the mixture on a lined baking tray. You can make the cookies as big or small as you want.
Put the cookies in the preheated oven for 15-30 minutes. It all depends on the thickness and size of the cookies. So keep checking how they look.
They should be slightly brown on the outside.
Let them cool completely and enjoy.
You can save these cookies for up to a week in an airtight container.

    • Sorry, don’t have a picture of the inside.
      And the dates depend on the kind you have. As you can see you have to fill it up until the banana and dates together are 180 grams :).
