I’ve been working on a couple of blog posts but I thought I’d share a recipe with you, first. I don’t always eat bread for lunch but sometimes I like to make myself a nice sandwich with veggies and more. I make a lot of tempeh-tomato-avocado sandwiches but that’s too easy.
Below you’ll find the recipe to one of the sandwiches that I love to make. It’s flavorful, healthy and delicious. It’s relatively easy to make and also makes a great lunch to take with you (the tofu tastes good while still hot but it’s also good when it’s cooled down).
Vegan Tofu Red Curry Sandwich
– 2 slices of your favorite bread
– Peanut butter
– Thai red curry paste
– Tamari (or soy sauce)
First off, slice the tofu in 0.5-1 cm thick slices. Put them in a bowl with some tamari and let them sit (occasionally turning them).
While the tofu’s marinating thinly slice the cucumber and avocado. I also toasted the bread, but that’s my personal preference. If you prefer bread un-toasted then by all means skip that step.
In a small bowl mix two teaspoons of peanut butter with one teaspoon of Thai curry paste. The mixture can get a bit thick so add a little bit of hot water, if needed. Taste to see if you want the mixture and spicier or not.
Last, in a skillet, bake the tofu slices until crispy on both sides.
Now, all you have to do is assemble the sandwich. Spread the peanut butter mixture on both slices of bread. Top one slice with cucumber slices, avocado and tofu and top off with the other piece of bread.
Pour yourself a glass of water to enjoy with the sandwich and enjoy!
